Notes: This recipe is easy to throw together. It makes enough for two cookie sheets. I like to use either coconut oil (melted) or sunflower oil. I've used a variety of flours... oat, spelt, rye, kamut, and they have all worked well. Also for the chocolate chips, I've tried mini and regular size but find that the regular size makes for a better chocolate experience, ie. larger chunks of chocolate tastes more satisfying. Other subs I've made: - almond butter for pb We have tested baking these right away and also keeping the cookie sheets in the refrigerator for at least 30 minutes before baking. Ingredients: 2/3 cup natural peanut butter 4 tbsp oil 1 3/4 - 1 cup coconut sugar (start small to test for sweetness) 2/3 cup non-dairy milk 2 tsp vanilla 2 cups whole grain flour 1 tsp baking soda 1 tsp salt 1 1/2 cup rolled oats 1 cup vegan chocolate chips | Instructions: 1. Mix pb, oil, sugar, milk, and vanilla in a bowl. 2. Add the rest of the ingredients to the first bowl and lightly mix together before mixing everything together. 3. If dough is a bit dry, then roll into balls, then place on cookie sheets, and flatten with the back of your hand or measuring cup. Otherwise, if it feels more wet, drop by rounded tablespoon. 4. Bake 400 degrees (yes, that high) for 15-20 min. Do not overbake!!! They should feel really soft when they are done because they will firm up more after cooling. |
These sound delicious!! I can't wait for my family and I to try them. Does using coconut oil then make them into coconut peanut butter chocolate chip oatmeal cookies? I've only ever used coconut oil as lotion or for medicinal uses. Thanx for sharing Rose!

DeleteI've used coconut oil but the brand that I use (Nutiva) is strong and you can totally taste the coconut. So yes, I guess using it would make them coconut PB chocolate chip oatmeal cookies, which is also delicious!
