Recipe: Red Bean and Quinoa Chili
Adapted From: Cynthia Lair's "Feeding the Whole Family"

Notes: The original recipe included green bell pepper and corn, which we did not have, but definitely will incorporate in the future! I was kind of in a hurry to make this because we had leftover bean broth from yesterday and did not want to find room in the freezer for it.

Ingredients:
1 tbsp olive oil 1 onion, diced 4 cloves garlic, minced 1 tsp salt 1 tsp cumin 1 tsp dried oregano 1/4 tsp cinnamon 1 1/2 cups quinoa 3 cups bean broth or water 2 tbsp tomato paste + 1 cup water or 1 cup tomato sauce 2 cups cooked kidney beans |
Instructions:
1. Heat up a pot on medium high, then add olive oil.
2. Saute onion and garlic until soft, about 3-5 minutes. 3. Add salt and spices to the mixture and mix together. 4. Add quinoa, broth/water, and tomato paste/sauce to the pot. Stir to combine. 5. Bring to a boil, then simmer for 20 minutes on low. 6. Add beans and cook on low heat for 10 minutes. |
