salad:beets, lettuce, radishes recipe #1 - lemony lentil soup with carrots, liscia, and leftover celery recipe #2 - bok choy and mustard greens, maybe sauteed greens? recipe #3 - fennel, have not had a positive experience with this on it's own! So may need to find a new recipe since we don't have any vegetables to roast it with recipe #3 - kale, perhaps use it for smoothies next week |

What actually happened:
Stayed with plan with a few minor changes... too lazy to cook the fennel, I chopped it up and put it in the freezer until we get more apples to make roasted veggies. Made mung bean spaghetti sauce with the mustard greens, recipe forthcoming!
