Recipe: Anykine Cookies
Adapted From: "Peas and Thank You: Simple Meatless Meals the Whole Family Will Love" by Sarah Matheny

Notes: This is an awesome book that we checked out from our local library. The original recipe is called "Anytime Cookies" but I changed it to Anykine... because I've lived in Hawaii and that's exactly what they are. You can through in all sorts of stuff into this cookie. Seriously, anykine.

Ingredients:
8 tbsp ground flaxseed 1 cup water 3 cups rye flour 1 cup old fashioned oats 1 cup date sugar 1 tsp baking soda 1 tsp ground cinnamon 1/2 tsp ground nutmeg 3/4 cup coconut nectar 1/2 cup sunflower oil 1 cup non-dairy milk 3 tsp vanilla Mix-ins: 1/2 cup raisins 1/2 cup chocolate chips 1/2 cup chopped walnuts |
Instructions:
1. Combine water and flaxseed in a small bowl and set aside.
2. In a large bowl, mix flour, oats, baking soda, date sugar, baking soda, and spices. 3. In another bowl, mix the wet ingredients. 4. Add wet ingredients to dry ingredients and stir to combine, then add the mix-ins. 5. Drop by 24 spoonfuls onto two cookie sheets and bake at 350 degrees for 15-20 minutes. The dough will not spread, so you can press them slightly to flatten (we didn't but probably will next time). |
