1/20/13 Gift Box

As a thank you for dog-sitting, we were gifted a veggie-only CSA box! We love edible gifts.
I had a marathon cooking afternoon on Monday, because I knew this week was going to be too busy to cook and I didn't want any of it to go bad before the weekend. As a result, I have newfound respect for people who do OAMC (Once a Month Cooking).
Honestly, I'm interested. But the thought of cooking all day with all those dishes to wash at the end does not sound appealing. I also don't have enough room in my freezer. But last Monday, I did cook two dishes and prepared the salad, which took me about 2 hours, and that included washing all the dishes. I think the time saving part for OAMC comes from just rinsing pots, knives, and cutting boards to use for another dish, instead of soaping and rinsing them all.

In the gift box: carrots + greens, broccoli, lettuce, chard, potatoes, beets + greens, radicchio, celery, butternut squash
Bonus: Cut up defrosted butternut squash


What I Did:
1. Made salad with lettuce, beets (steamed them), and radicchio
2. Lentil soup (slow cooker) with carrots (greens were limpy and sad, so they went in the trash), chard, and defrosted butternut squash
3. Cut up celery for ants on a log (using our homemade peanut butter!)
4. Steamed the broccoli with carrots from our last CSA box and we ate this as a side with quinoa and falafel (recipes coming soon)

So now we just have the potatoes and butternut squash to deal with, but they are hearty vegetables and will last longer than said vegetables above. The beet greens we will use for smoothies.
