Recipe: Banana Peanut Butter Muffins

Notes: The original recipe is for mini muffins but we like them a bit bigger so we baked them in a standard muffin tin.
I've also subbed 1 flax egg (1 tbsp flax mixed with 3 tbsp water, then let sit for about 5 min). Delicious either way! | |
Ingredients:
1 1/4 cup kamut flour
1/2 tsp salt
1/2 tsp cream of tartar
1/4 tsp baking soda
2 ripe medium bananas, mashed
1 large egg
1/3 cup date sugar
1/3 cup sunflower oil
1/2 cup non-dairy milk
creamy peanut or almond butter

Instructions:
1. Mix flour, salt, cream of tartar, and baking soda in a bowl. 2. In another bowl, mash bananas, then add sugar and egg. Mix in oil and milk until smooth. 3. Slowly add wet ingredients to dry ingredients, being careful not to overmix the batter. 4. Drop about 2 tbsp of batter into each oiled or nonstick muffin cup (use a 12 cup pan) and top with 1/2-1 tsp of peanut/almond butter. 5. Cover with about 2 tbsp of batter on top of the nut butter to cover. 6. Bake at 350 degrees for 15-20 minutes or until dry on top. |

A while back I had found a recipie for a smoothie that helped people with the disorder and now cant find it. It had flax seed and other stuff. If you hear about it can you post it? Thanks liz
ReplyDeleteHi Liz! I did a little bit of research and while I found no formal recipes, all of them were made with greens. I read too that omega 3's help with inflammation associated with eczema, which makes sense that you heard about one with flax, which is a great source of omega 3's. I plan to do a post on green smoothies soon. Stay tuned!
