Notes: Use whatever seasonal fruit you have! Blueberries, apples, peaches, etc.
The original recipe calls for adding maple syrup to the fruit but if you use really ripe fruit, you can skip this. | |
Ingredients:
2 cups rolled oats
1 cup flour
1/2 tsp salt
1/2 cup coconut oil
1/4 cup coconut nectar
4 tbsp water 2 tsp cinnamon 1/2 tsp nutmeg
4 tsp vanilla
5 cups ripened fruit
Optional:
1/2 cup chopped nuts |
Instructions:
1.Mix oats, flour, and salt in a bowl. 2. Add oil and nectar; mix well. Stir in nuts if using. 3. In a smaller bowl, add water, spices, and vanilla. 4. Add sliced fruit to an oiled 9x13 pan. 5. Pour water mixture over fruit and toss lightly. 6. Sprinkle oat mixture over the fruit. 7. Bake 45 min to an hour in a 350 degree oven. |
