Recipe: Red Enchilada Sauce

Notes: Looking forward to using this for a polenta casserole! We add very little chili powder because 1/8 tsp is already extremely spicy for us.

Ingredients:
1 tbsp olive oil 1 onion, minced 2-4 cloves minced garlic 4 tbsp flour (use GF if desired) 1/8 tsp - 2 tbsp chili powder 1 tsp cumin 24 oz tomato sauce 1/2 tsp salt 1/2 cup - 1 cup water |
Instructions:
1. Heat up olive oil on medium heat.
2. Saute onions until translucent, then add garlic, flour, and chili powder. 3. Stir and cook for 2 minutes, then add cumin and tomato sauce. 4. Simmer over medium-low heat for 5-10 minutes. 5. Add water for desired consistency and salt to taste. |
