10/14 Week - CSA Delivery


Here's what we got coming up this week. We receive these on Thursday so I will probably be cooking with them either this weekend or sometime early next week.

VEGGIES

avocado
beets or cucumbers
broccoli
chard
 grape tomatoes
eggplant
dill
spring mix
squash (butternut)
FRUIT

apples
plums
oranges

Other: Basil or grapefruit

MEAL PLANS

Salad - avocado, beets/cucumbers, grape tomatoes, spring mix

All fruit, eat as snack.

Smoothie - oranges, beet greens (if we get them), dill, chard

Dill - make into salad dressing

Veggies to cook - broccoli, chard, eggplant, squash

Idea #1 - steamed broccoli with mashed potatoes and beans 

Idea #2 - brown rice pasta (love Trader Joe's!) with veggies (chard, eggplant, squash)
SHOPPING LIST

Farmer's market - need to buy lemon, 1 green (kale), maybe 1 lettuce (we are out)

10/15 food prep: Tonight I slow cooked a whole spaghetti squash. Quite exciting! I took out previously slow cooked chicken and steamed broccoli from the freezer to defrost so we can have the squash with chicken and broccoli for dinner tomorrow.

What actually happened:

Meals cooked:
1. Brown rice pasta with tomato sauce pureed with black eyed peas and eggplant
2. Slow cooker soup with butternut squash, kale, broccoli, white beans (this wasn’t very tasty but I still ate it)
