Recipe: Paleo Crust

Notes: I was too lazy to roll out this crust so just pressed into my baking dish. For the top "crust", I just took pieces of dough and pressed flat between my hands, then gently placed on top of the fruit to cover the pie as much as I could. I was able to make 4 small pies (ramekin sized) with a top and bottom crust (no sides) with this recipe below.
I used cherries (previously frozen) and diced apples as my filling and baked in a 325 degree toaster oven for about 20-25 minutes. | |
Ingredients:
1 1/4 cups blanced almond flour 1/4 cup tapioca flour 1/8 - 1/4 tsp salt 1/2 cup organic palm shortening ~1/4 cup ice cold water |
Instructions:
1. Add flours and salt to a medium sized bowl and stir to combine.
2. Mash the shortening into the dry ingredients with a fork until crumbly. 3. Slowly add water, 1 tbsp at a time, and incorporate into the dough with your hand until the dough is able to form a ball. 4. Tightly cover with plastic wrap or in a airtight container and refrigerate for 3-4 hours. 5. Roll out the dough or use your hands to press into a baking dish. Add desired fillings and bake according to pie recipe. |
