Recipe: Paleo Biscuits

Notes: When I was younger, I loved the sausage biscuit with egg from McDonald's. I also loved biscuits and gravy! We use this recipe below to make our own sausage biscuit breakfast sandwiches.

Ingredients:
1/2 cup non-dairy milk 1 tsp lemon juice or apple cider vinegar 1 cup blanched almond flour 2/3 cup tapioca flour 1/2 cup coconut flour 2 tsp baking powder 1 tsp baking soda 1/8 tsp sea salt 5 tbsp palm shortening 2 eggs |
Instructions:
1. In a small bowl, mix the milk and lemon juice or apple cider vinegar and set aside for at least 5 minutes.
2. Mix the remaining dry ingredients in a medium bowl. 3. Cut in the palm shortening into the dry ingredients with your hand or fork until the mixture is crumbly. 4. Add the eggs to the wet ingredients and mix until well combined. 5. Make a well in the dry ingredients and slowly fold in the wet ingredients until well combined. 6. Allow the dough to sit for 5 minutes so the flours can absorb the moisture. 7. Coat a 1/4 cup measure cup with tapioca flour, then scoop enough dough to fill the cup and invert onto your greased baking sheet. You may need to tap the handle or use a rubber spatula to help release the dough. 8. Place each biscuit about 1 inch apart, then bake for 12-14 minutes in a 400F degree oven or until light golden brown. 9. Cool on a wire rack. |
