Red Cabbage with Apples


Recipe: Red Cabbage with Apples

Servings:  8-12     Prep Time: 15-20 min
Notes: I could tell my toddler was hesitant by this dish, but after I convinced her it was sweet because of the apples, she took a bite. This isn't a dish I'd make regularly because we hardly have red cabbage, but we got some  in our CSA box and other than salad, had no idea what to do with it!
We ate this with beans or mashed potatoes.

Ingredients:
1 large head red cabbage, washed and sliced
1 medium onion, diced
6 apples, cored and diced
2 tsp salt
2 cups hot water
3 tbsp date sugar
2/3 cup cider vinegar
6 tbsp butter

Instructions:
1. Place ingredients in order in a slower cooker.
2. Cook on low for 8 hrs or until cabbage is soft.
