Recipe: Garbanzo Bean Pancakes

Notes: We were able to make 10-12 two inch pancakes. It was an easy recipe and my daughter enjoyed them with honey, then fruit jam.

Ingredients:
3 tbsp ground flaxseed + 9 tbsp warm water 1 1/2 cups chickpea flour 1 tsp ground cinnamon 1 tsp baking soda 1 tsp vanilla extract 1 1/2 cups non-dairy milk optional: 1 tbsp honey coconut oil for cooking |
Instructions:
1. In a bowl, mix the flaxseed with water and set aside for 5 minutes.
2. In another bowl, combine flour, cinnamon and baking soda in a bowl, breaking up lumps. 3. Add vanilla, milk, and honey to the flaxseed mixture and stir to combine. 4. Add wet mixture to dry ingredients and mix well. 5. Preheat a non-stick pan on medium heat. Add about 1 tsp of coconut oil and spread around the pan. 6. Add about 1/4 cup of batter to the pan for one medium sized pancake or 3 separate tablespoonfulls to make little pancakes. Cook for a few minutes on each side or until the surface looks dry. 7. Remove from pan and repeat steps until all the batter is done. You may have to keep adding coconut oil. |
