Recipe: Buckwheat Millet Granola

Servings: about 12 cups Prep Time: 20-25 min
Notes: This recipe makes a ton of granola! Also the granola didn't look dry when it was done, so that's why it's best to taste a little bit to see how crunchy it is. It will also get a bit more crunchy as it cools.
I've also tried replacing the buckwheat with rinsed quinoa and had great results! | |
Ingredients:
5 cups uncooked buckwheat, rinsed 5 cups uncooked millet, rinsed 1 cup dried cranberries 2 cups coconut flakes 3 tsp cinnamon 1 tsp salt 1/2 cup coconut oil, melted 1 cup honey 1 cup sunflower seeds |
Instructions:
1. Combine all ingredients (except sunflower seeds) in a large bowl and mix well.
2. Spread evenly onto 2 large baking pans and bake in a 325 oven for 30 minutes. 3. After 30 minutes, stir and add sunflower seeds. 4. Bake another 15 minutes or until light golden brown and crunchy. |
