Recipe: Yellow Lentil Stew

Notes: This was a tasty slow cooker recipe that resulted from too much bean broth, too many green beans in our CSA box, and yellow lentils that also needed to be cooked. Kidney bean broth gives this stew a nice deep flavor, perfect for cold winter days.

Ingredients:
4-5 cups kidney bean broth 1 onion, diced 1 cup yellow lentils, rinsed 3 diced small carrots 2 diced zucchini 1 big handful green beans, stem removed, and cut into small pieces (about 1/4 inch long) 1 bunch greens, sliced optional: 1-2 cups kidney beans |
Instructions:
1. Add all ingredients in order to slow cooker. Add more water to cover the vegetables, if needed. It's ok if greens are not submerged in liquid.
2. Cook on low for 8 hrs or high for 4 hrs, stirring occasionally and adding more water if the stew looks dry. |
