Notes: Ethiopian food is one of my faves. I especially love the salad that is arranged in the center of the all the other foods on top of the injera. One of these days, I'll get around to trying to cook other Ethiopian dishes!
I had extra dill so added 1/8 cup chopped to this recipe. | |
Ingredients:
1 pint grape tomatoes, halved 2 medium cucumbers, diced 1/2 cup onion, diced 6 tsp lemon juice 4 tsp brown rice vinegar 1/2 tsp salt 1/2 tsp pepper 4 tsp olive oil |
Instructions:
Add all ingredients to a bowl and toss to combine. Adjust seasonings as needed.
