Red Lentil Curry (slow cooker)


Recipe: Red Lentil Curry (slow cooker)

Tested: 4/18/13, 7/24/13
Servings:  8-12 servings     Prep Time: 15-20 min
Notes: The original recipe is for lentil burgers, which I had tried, but to me, seemed like a lot of work. Also you can add nutritional yeast, like the original recipe, but it was also very good without it.
If you don't have tomato sauce, use 3 tbsp tomato paste and add an extra 1/2 cup of water.

Ingredients:
2 cups dry red lentils
6 tbsp tomato sauce
3 tsp curry
1/2 - 1 tsp salt
1 large onion, diced
4 garlic cloves, minced
2 medium carrots, diced
1 bunch greens, julienned
6-7 cups water

Instructions:
1. Add all ingredients to a slow cooker and give a good stir.
2. Cook on high for 4 hrs, or low for 8 hrs, stirring midway through.
