Chocolate Chip Caboodles


Recipe: Chocolate Chip Caboodles

Servings:     about 2 dozen  Prep Time:  10-15 min
Notes: This recipe is so simple. My husband first made it a month ago with oat flour and maple syrup. If going the GF route, be sure not to overbake. They should be soft when you take them out of the oven.

Ingredients:
1 1/2 cups peanut butter
2 1/4 cups buckwheat flour
1 tsp baking soda
1 tsp salt
1 1/2 cups coconut nectar
2 tsp vanilla extract
1 1/2 cups vegan chocolate chips
Instructions:
1. Either let peanut butter come to room temperature or heat up till it's easier to spread.
2. In a big bowl, add flour, baking soda, and salt and stir to combine.
3. To the same bowl, add coconut nectar, pb, and vanilla. Stir to combine, then fold in chocolate chips.
3. Roll into balls, place on a nonstick or oiled baking sheet, then flatten slightly (cookies will not spread during baking).
4. Bake in a 375 degree oven for 10-12 minutes.
