Homemade Chocolate


Recipe:  Homemade Chocolate
Adapted From:  Colour Me Happy

Notes:  These were absolutely blissful. Easier than I thought to make and really pleased with the results, although they do melt rather quickly so keep them in the freezer.
To a couple of the chocolates, we added coconut flakes, peanut butter (to make peanut butter "cups"), and almonds.

Ingredients:
2 oz coconut oil
1 oz cacao butter, broken into small pieces
3 oz cacoa powder (about 1 cup)
liquid sweetener to taste (we used a combo of honey and maple syrup)
Instructions:
1. To a small pot, add about 1/2 inch of water, then set a bowl on top of it that will sit on the rim without touching the water, then bring the water to boiling, then set at medium heat.
2. Add the coconut oil and cacao butter, and melt, stirring often.
3. Once melted, slowly add cacoa powder, whisk constantly to break up lumps.
4. After all the cacoa powder is mixed in (and no lumps), add sweetener to taste (we probably added 2-4 tbsp).
5. Divide chocolate into molds (we used silicone muffin holders) then freeze to harden.
