Recipe: Quinoa Pizza
Adapted From: Almonds & Avocados
Tested: 1/9/13 Servings: 1 pizza (about 2-3 servings) Prep Time: 10-15 min
Notes: We loved this recipe!!! The 2nd time we made it, we quadrupled the recipe and was actually able to get 5 pizzas out of it instead of 4. Our new favorite "pizza".
We used our Blendtec Twister Jar because the regular jar didn't do too well. The pizza dough will be thin but I found this to be a good substitute for regular pizza. And at least this version is healthier. We topped this with pizza sauce (not homemade) and Daiya vegan cheese. As you can see, it melts a little. We also ate some of this without any toppings with chana dahl. | |
Ingredients:
1 tbsp olive oil
3/4 cup dry quinoa
1/2 cup water 1 garlic clove 1 tsp dried oregano 1 tsp dried rosemary 1/4 tsp salt |
Instructions:
1. Rinse and soak quinoa in filtered water for at least 8 hrs.
OVEN METHOD 2. Before you blend the ingredients, coat an oven proof pan with 1 tbsp olive oil, then place in the oven and preheat to 400 degrees. 3. Drain and rinse the quinoa then add to a blender with the remaining ingredients. You want the consistency of pancake batter so add more water if needed. 4. Remove pan from oven and quickly add the batter, tilting the pan to coat or using a spatula to even it out. 5. Bake the dough for about 20 minutes then flip over and bake until brown and crispy, about 10 minutes. STOVETOP METHOD (a bit faster!) 2. Before you blend the ingredients, coat a skillet with 1 tbsp olive oil, then heat on medium high. 3. Drain and rinse the quinoa then add to a blender with the remaining ingredients. You want the consistency of pancake batter so add more water if needed.
4. Add batter to the skillet, tilting the pan to coat or using a spatula to even it out.
5. Cook for 10 minutes or until bottom is brown and crispy. Then flip over and cook for another 5 minutes or until brown and crispy.
FOR BOTH METHODS
After the pizza crust is cooked, add your cooked toppings then place under the oven broiler until toppings are heated through.
