We've also been eating (at least once or twice a week), beans, roasted veggies, and either brown rice or mashed root vegetables, so I may get lazy and do this again this week. We have a busy Saturday, so Sunday is the only weekend day I have to cook, otherwise, it will need to happen during the week.
