Cocoa Bites


Recipe: Cocoa Bites
Adapted From: FamilyFun Magazine, Feb. 2013

Servings:  25-30    Prep Time:  15-20 min.
Notes:  Here's another date-based recipe for all your blender/food processor fans! While trying to get all the "batter" out of the blender jar, my toddler was quick to remind me of that it was her turn before I even put the spatula in my mouth. 

Ingredients:
2 cups whole medjool dates, pitted
1/2 cup shredded, unsweetened coconut
1/2 cup almond flour
6 tbsp unsweetened cocoa powder 
Instructions:
1. Process all the ingredients in blender or food processor until a rough paste is formed.
2. Shape dough into balls using your hands. (Mine were about 3/4 inches in diameter.)

Option: You can roll the balls in chopped nuts or coconut to coat.
