Eggroll in a Bowl


Recipe: Eggroll in a Bowl
Adapted From:  Paleo Foodie Kitchen

Servings:  4-6   Prep Time:  20-25min
Notes: Health seeking food lovers of Filipino cuisine, rejoice! The ingredients are so simple, and yet all of them combined make for an easy to cook, but very satisfying meal. We enjoy this with brown rice, caulirice or our Gluten-Free Wraps.

Ingredients:
1/2 medium onion, diced
2 cloves garlic, minced
1 tbsp grated or minced ginger
1 lb ground turkey
1 cup grated carrots
1/4 cup coconut aminos
1 tsp fish sauce (patis)

2-3 cups spinach (optional)
sliced green onions for garnish (optional)

Instructions:
1. Heat up oil in a large sauce pan on medium-high heat.
2. Once the oil is heated, add the onion and saute for 3-5 min.
3. Add the garlic and saute for another 1-2 min.
4. Add the carrots and saute for another 2-4 min.
Add the turkey and saute until turkey is browned, or another 6-8 min.
5. Add the aminos, fish sauce, and spinach and cook until spinach is wilted.
6. Garnish with sliced green onions.
