Fruit Juice Gelatin (Jello)


Recipe: Fruit Juice Gelatin (Jello)

Servings:   1 9x13 pan    Prep Time: 10-15 min
Notes: My mom used to make jello for us growing up with fruit cocktail. I loved the cold, wiggly texture. I started experimenting more this summer with gelatin and glad we finally tried this recipe. My daughter loves this with fresh cut mango!

Ingredients:
4 cups fruit juice
4 tbsp gelatin

1-2 cups soft fruit, cut small (optional)
Instructions:
1. Add 1 cup of the fruit juice to a small bowl and sprinkle the gelatin on top. This will "bloom" the gelatin and gel up the juice. Let sit for at least 5 minutes. Gently stir after 1 minute to make sure all the gelatin powder has been mixed in.

2. Meanwhile, in a small saucepan, heat up the remaining juice, but do not bring to a boil. Slowly add the gelled fruit juice and stir until dissolved.

3. If using, add the fruit to your molds or a 9x13 pan.

4. Carefully pour the fruit juice/gelatin into your molds and let harden in the refrigerator for at least 4-5 hours.
