Paleo Coconut Macaroons


Recipe: Paleo Coconut Macaroons
Adapted From:  Elana's Pantry
Tested: 7/3/2014
Servings:  24     Prep Time: 10-15 min
Notes: These are addicting!!!

Ingredients:
3 cups unsweetened shredded coconut 
2 tablespoons coconut flour
1/4 teaspoon sea salt 
4 tablespoons coconut oil 
¼ to 1/2 cup honey 
2 tablespoon vanilla extract

For the chocolate glaze:
1/2 cup chocolate chips
Instructions:
1.    In a food processor, combine shredded coconut and coconut flour.
2.    Pulse in salt, coconut oil, honey, and vanilla
3.    Dough will form a ball.
4.    Scoop batter 1 level tablespoon at a time onto greased baking sheet.
5.    Bake at 350° for 7 minutes or until golden brown.
6.    Cool for 3 hours, then dip in melted chocolate.


Chocolate Glaze:
1. After the cookies have cooled, pour chocolate chips into a double boiler and using a fork, stir until they have melted. This should take less than 5 minutes.

2. Once the chips are melted, use a fork to scoop chocolate onto the tops of the cookies and smooth or if you're so inspired, a cute decoration. Or simply dip the top of the cookie into the melted chocolate.
