Recipe: Cheesy Crackers

Notes: My little girl loved rolling out the dough and cutting shapes. The taste of these crackers will surprise you... who needs Goldfish!

Ingredients:
1 cup chickpea flour (besan), sifted before measuring 1/4 teaspoon salt 1/2 teaspoon baking powder 1/4 teaspoon turmeric 4 tbsp nutritional yeast (be sure to buy one marked gluten-free) 1 tbsp sunflower oil 4-6 tablespoons water For dusting: chickpea flour |
Instructions:
1. Mix all dry ingredients in a bowl.
2. Add in the oil, then water, one tbsp at a time until dough can form a ball. 3. Knead the dough several times, then roll into a ball and wrap in plastic wrap and set it aside for 10 min. 4. Dust your work area and rolling pin well with chickpea flour. 5. Roll out the dough to about 1/8 inch and cut with desired shapes. Transfer carefully to an oiled baking sheet. Repeat this process until all the dough has been cut. 6. Bake in a 350 degree oven for 15-20 minutes. Crackers will crisp up more as they cool down. |
