Banana Bread


Recipe:  Banana Bread
Adapted From:  The Seasonal Diet
Tested: 5/13/14
Servings:   9-6    Prep Time: 15-20 min
Notes:  I like to bake banana bread in our glass pyrex 8x8 pan because it's easier to store.

Ingredients:
1 tbsp ground flax
3 tbsp water

1 1/2 cups almond meal
1 cup brown rice flour
1/4 cup date sugar 
1 tsp cinnamon
2 tsp baking soda
3/4 tsp salt

5 really ripe bananas
1 tsp vanilla
2 tbsp coconut oil
1/4 cup chopped walnuts (optional)
Instructions:
1. Mix flax and water in a medium bowl and set aside for 5 minutes.
2. In another bowl, mix all the dry ingredients, breaking up any lumps.
3. Add the bananas, vanilla, and coconut oil to the flax/water mixture. Break up the bananas with the back of a fork and mix well.
4. Add wet ingredients to the dry ingredients. Mix in walnuts if using.
5. Bake in a 350 degree oven for 40-50 minutes or until the surface is slightly firm to touch and tester comes out clean.
