Elderberry Syrup


Recipe: Elderberry Syrup
Adapted From:  Mountain Rose Herbs
Tested:  1/28/14
Servings:   about 3 cups    Prep Time: 15-20 min
Notes: After paying nearly $20 for 4 fl oz of elderberry syrup this past December, and not even liking the entire ingredients list, I decided it was worth trying to make. This recipe is simple, saves a ton of money (I paid $4 for 4 oz of organic elderberries and I think that is enough for 2-3 batches), and tastes way better than the store bought stuff. Get your DIY on!
The original recipe uses 1 cup raw honey, but I thought that was a little sweet for our tastes.
Store the syrup in the refrigerator for 2-3 months.
Usage: 1 tsp every 2-3 hours while sick. 1 tbsp daily to ward off sick germs.

Ingredients:
1/2 cup dried black elderberries
3 cups water
1 cinnamon stick
3 cloves
2 inch piece of ginger, sliced

2/3 cup raw honey
Instructions:
1. Add all ingredients except honey to a small saucepan and bring to a boil, then simmer for 30 minutes.
2. Once cooled, mash berries, then strain mixture, and stir in honey.
