Beet Pizza


 
Recipe: Beet Pizza
Adapted From:  Cooking with CSA
Tested: 5/20/13
Servings:  6-8      Prep Time:  15-20
Notes: Before you write this off, let me tell you that both my husband and toddler helped themselves to two servings of this. Seriously! It was really good!

Ingredients:
2 medium beets, sliced
1 cup sunflower seeds
1 cup pumpkin seeds
1 cup tahini
2 tsp dried oregano
4 tbsp coconut oil
1/4 tsp salt

4-6 tbsp tomato sauce
your choice of pizza toppings
Instructions:
1. In a food processor or blender, blend all the ingredients until smooth. It may help to process in two batches.
2. Divide the mixture in half and spread onto two baking pans, about 1/4 inch thick. If you make it thicker than that, you will have to cook longer.
3. Bake in a 350 degree oven for 25 minutes.
4. Remove baking pans and spread half of the tomato sauce and toppings on one pizza, and the remaining on the 2nd pizza.
5. Bake for an additional 10 minutes or until toppings and sauce are heated through.
6. Slice into wedges and enjoy!


Note: If you baked this long enough, the pizza slices will not fall apart!
