Brazilian Cheese Waffles


Recipe: Brazilian Cheese Waffles

Notes: After trying Brazilian cheese waffles at Mission Heirloom in Berkeley, I was hooked! Their recipe uses cassava flour, which I didn't have and is slightly more expensive than tapioca flour. I also did not use cow cheese, but instead opted for Pecorino Romano sheep cheese from Trader Joe's. Such a steal at $8.99/lb! If the batter seems too thick, add a little more non-dairy milk.

Ingredients:

1/2 cup olive oil
1 cup full-fat non-dairy milk
2 cups tapioca flour
4 large eggs
1/2 lb shredded or sliced Pecorino Romano cheese

1/4-1/2 tsp salt
Instructions:
1. Add all ingredients to a blender and blend until smooth.
2. Pour the batter into the waffle iron so it just covers the bottom portion of the iron, being careful not to overfill it.
5. Cook the waffles until desired crispiness.


We have an indicator on our waffle maker, we like them more on the crispy side! This recipe made 7 Belgian waffles in our waffle maker.
