Cashew Sour Cream


Recipe: Cashew Sour Cream
Adapted From:  Against All Grain
Tested: 3/6/2016
Servings: 3/4 cup      Prep Time: 10-15 min
Notes: While this isn't EXACTLY like dairy sour cream, it came close enough to make our loaded sweet potatoes super delicious!

Ingredients:
1/2 cup raw cashews
1/4 cup water
1/2 tsp lime or lemon juice
1/2 tsp apple cider vinegar
1/4 tsp sea salt
Instructions:
1. Soak cashews in a bowl for two hours with enough water to cover them.
2. Drain and rinse the cashews, then add to a blender with 1/4 cup fresh water and the remaining ingredients.
3. Blend until very smooth.
4. Refrigerate for at least an hour before serving, or up to 3 days.
