Grain-Free Pumpkin Waffles


Recipe: Grain-Free Pumpkin Waffles
Adapted From: Hungry Healthy Girl
Tested:  1/10/2015
Servings:  7-8      Prep Time:  15-20 min
Notes: I have these waffle molds. So I fill mine, bake for about 15-20 min in a 400 degree oven, take them out and let them cool down a bit, then flip, and bake for another 10 min. Somewhat of a long process but worth the end result!

Ingredients:
    1/2 cup coconut flour
    1/2 cup almond flour/meal
    1 1/2 teaspoons cinnamon,
    3/4 teaspoon nutmeg
    1 teaspoon baking soda
    1/2 teaspoon salt
    5 large eggs
    2 tablespoons olive or melted coconut oil
    2 ripe (medium) bananas
    1/2 cup pumpkin puree
    3/4 cup non-dairy milk
Instructions:
1. Preheat waffle iron and spray with a natural cooking spray.
2. Combine all ingredients in a blender (or food processor) and blend until smooth.
3. Continue to spoon out and spread batter over waffle iron until you have cooked all waffles.
