Cauliflower Rice


Recipe: Cauliflower Rice

Servings:    4-6   Prep Time: 15-20 min
Notes:  I thought this was pretty good. It is somewhat of a lot of work, but it did go well with the pumpkin cashew coconut curry. To be posted soon...

Ingredients:
1 head cauliflower, stem removed, roughly chopped
1 tbsp coconut oil
1/4 tsp salt

1/2 cup coconut milk
1/4 cup unsweetened shredded coconut
1/2 - 1 tbsp raw honey

Instructions:
1. Add chopped cauliflower to a food processor or blender and process until the pieces are the size of rice.
2. Add the coconut oil to a medium pot and add the cauliflower. Add the salt, then cover to steam, stirring occasionally.
3. After 2-3 minutes, add the remaining ingredients and cover to cook down. Stir occasionally.
4. Let cook for 5-8 minutes until coconut milk has evaporated.
