Recipe: Chickpea Nuggets

Notes: These nuggets tasted like falafel but much easier to make. My toddler loved them and even enjoyed calling them "nuggets".
We made these gluten free by using Mary's Gone Crackers Crumbs. | |
Ingredients:
2 cups chickpeas, drained 1/2 medium onion 1/2 cup parsley leaves 1 clove garlic 1 egg 1 tbsp olive oil 1 tsp cumin 1 tsp lemon juice 1 tsp baking powder 1/2 tsp salt 1 cup bread crumbs |
Instructions:
1. In a food processor or blender, add chickpeas, onion, parsley, and garlic, and blend for 10 seconds.
2. In a small bowl, whisk egg, oil, cumin, lemon juice, baking powder, and salt. Add this to the chickpea mixture and blend until smooth. 3. Add the bread crumbs and blend together or dump everything into a bowl and stir to combine. 4. Using your hands, shape each nugget and place onto an oiled baking sheet. 5. Bake in a 450 degree oven for 10-15 min. |
