Sweet Potato Patties


Recipe: Sweet Potato Patties
Adapted From:  FamilyFun Magazine, March 2013 issue

Servings:  8-12     Prep Time: 25-30
Notes: This is a good big batch recipe. A bit time consuming, but the patties freeze well. My toddler likes them with mayo.

Ingredients:
2 large sweet potatoes (about 1.5 lbs)
1 1/2 tbsp vegan butter
1 1/4 cups spelt bread crumbs
1/2 small onion, finely diced
1/2 cup finely chopped nuts (we used cashews)
3 tbsp parsley
1/2 tsp salt

coconut or olive oil, for pan frying
Instructions:
1. Steam the potatoes until fork tender, about 25-30 minutes. Remove steam insert from pan and let water evaporate from potatoes, about 5-15 minutes.
2. Remove water from the steamer pot and add potatoes and mash until smooth. 
3. Add the remaining ingredients and mix until well blended.
4. Shape the mixture into patties (about 2 tbsp each patty).
5. Coat the bottom of a large skillet with oil and warm over medium-high heat. 
6. Fry the patties in batches until well browned, about 3-5 minutes per side. Add more oil as needed.
