Mashed Potatoes


Recipe:  Mashed Potatoes
Tested: 11/10/13
Servings:    6-8   Prep Time:  10-15 min
Notes: I was obsessed with mashed potatoes as a child. I remember making it myself using the flaked potatoes from a box. The simplicity of potatoes, milk, butter, and salt. So creamy and delicious!!! Here's a cleaner version. My toddler loves to mash! After we steam the potatoes, we just remove the steam insert, dump the water, and put the potatoes back in the pot to mash.  (I told my husband that the mashed potatoes shouldn't fall apart. Seriously, that's not mashed potatoes.)

Note: I saw this recipe on Post Punk Kitchen, that uses olive oil instead of vegan butter, so might give that a try next time and update. 
Ingredients:
8-10 small potatoes
1/4 cup vegan butter
2-3 cups non-dairy milk
salt to taste
Instructions:
1. Steam potatoes for 20-30 minutes, or until fork tender.
2. Add butter and mashed until the butter is melted.
3. Add the milk, about 1/4 cup at a time until desired consistency.
4. Add salt to taste.
