Chia Chocolate Pudding


Recipe: Chia Chocolate Pudding
Tested: 3/10/2015
Servings:    about 1 cup   Prep Time:  5 min
Notes: As part of a Eat Less Sugar challenge, I put together this recipe. It's simple and easy to throw together when chocolate cravings strike hard, plus it only uses fruit as sweetener. I've also used a room temperature banana, which is equally rich and delicious, but will come out warmer than using a frozen banana.

Ingredients:
2 tbsp chia seeds
4 tbsp water

1 pitted date
1 frozen overripe banana
1 tbsp cashews
1 tbsp cacao powder

Instructions:
1. Add chia seeds and water to a blender and swish around manually and then let sit for 5 minutes.
2. Add remaining ingredients and blend until smooth.
3. Add more water if necessary.
