Blueberry Banana Oat Muffins


Recipe: Blueberry Banana Oat Muffins

Servings:   12-15    Prep Time: 15-20 min
Notes: Here's another recipe we tried using our fresh picked organic blueberries! These are super moist, so if you want them a bit drier, increase the baking time.

Ingredients:
3 medium bananas
1/4 cup honey
1 tsp vanilla extract

2 cups whole oat flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 ground ginger

1 cup fresh or frozen blueberries

Instructions:
1. Add wet ingredients to a bowl and mash the bananas.
2. Add the dry ingredients to the wet ingredients and stir to combine, breaking up lumps.
3. Add the blueberries and fold into the batter carefully.
4. Spoon the batter into muffin cups and bake in a 350 oven for 20-25 min or until lightly browned.
