Chickpea Salad


Recipe: Chickpea Salad
Adapted From:  "The Cancer Project's Cancer Survivor's Guide: Foods That Help You Fight Back" by Neal D. Barnard, and Jennifer K. Reilly, R.D.

Notes: We tried this on lettuce wraps at a Vegan Food Festival earlier this year. I like how my toddler says she really wants to go back there again soon...
If you like tuna salad, then you will appreciate the taste and texture of this vegan version!

Ingredients:
1 1/2 cups cooked chickpeas, drained
1/2 cup finely chopped celery
1/4 cup green or white onion, chopped
2-3 tbsp vegan mayonnaise
1 tbsp dijon mustard
2 tbsp pickle relish
salt and pepper to taste
Instructions:
1. Coarsely mash the beans with a fork or potato masher, leaving some chunks.
2. Add the remaining ingredients and mix well.
